Guajillo Chiles
2,500 to 5,000 Scoville Units
The Guajillo Chile is the dried form of Mirasol Chile. This smooth-looking, bright red chile is approximately 5 inches long and is grown mainly in the Mexican state Zacatecas. Guajillo chiles have a sweet, fruity, tangy, smoky flavor profile with notes of berries and tea. They have a mild heat, registering 2,500 to 5,000 on the Scoville scale. The Guajillo chile is one of the most used chile peppers in Mexican gastronomy to give color and flavor to sauces, moles, marinades, and a lot of other stews.
