“Maranta arundinacea”

Arrowroot is valued chiefly for its thickening properties, and is often used in thickening clear sauces, glazes and jellies.  It thickens at a lower temperature than mixtures made with flour or cornstarch so it should be mixed with cool liquids before adding to hot.
