Anchos have a mild, sweet, fruity flavor.  An Ancho is a dried Poblano Pepper and often is mis-labeled as a Pasilla or Mulato pepper. Combined with Pasilla Negro and Mulato, it forms the Holy Trinity of chiles used to make moles.
